Lamb Kofta (tatar Style Lamb Kofta)

Ingredients

  • 1 lb ground lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a large bowl, mix together the ground lamb, onion, garlic, parsley, cumin, coriander, paprika, cayenne pepper, salt, and pepper until well combined.
  2. Divide the mixture into equal portions and shape each portion into a sausage-like cylinder around the soaked wooden skewers.
  3. Heat a grill or grill pan over medium heat. Grill the lamb kofta for about 6-8 minutes, turning occasionally, until cooked through and slightly charred.
  4. Remove from the grill and let rest for a few minutes before serving.
