Ingredients
- 1 lb ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a large bowl, mix together the ground lamb, onion, garlic, parsley, cumin, coriander, paprika, cayenne pepper, salt, and pepper until well combined.
- Divide the mixture into equal portions and shape each portion into a sausage-like cylinder around the soaked wooden skewers.
- Heat a grill or grill pan over medium heat. Grill the lamb kofta for about 6-8 minutes, turning occasionally, until cooked through and slightly charred.
- Remove from the grill and let rest for a few minutes before serving.
