Ingredients
- 2 lbs lamb, cut into chunks
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, peeled and cubed
- 1 tsp salt
- 1/2 tsp black pepper
- 8 cups water
- 1 bunch fresh cilantro, chopped
Instructions
- In a large pot, combine the lamb, onion, carrots, potatoes, salt, and black pepper.
- Pour in the water and bring to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for 1.5 hours, or until the lamb is tender.
- Skim off any foam that rises to the surface during cooking.
- Stir in the chopped cilantro and cook for an additional 10 minutes.
- Adjust seasoning to taste and serve hot.
