Lamb Stew (ensopado De Borrego)
Lamb stew, or Ensopado de Borrego, is a traditional Portuguese dish that is hearty, flavorful, and perfect for a cozy meal. This stew is made with tender lamb, vegetables, and aromatic herbs, creating a comforting and satisfying meal.
Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 3 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup red wine
- 4 cups beef or lamb broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the lamb chunks with salt and pepper.
- In a large pot, heat the olive oil over medium heat and brown the lamb in batches. Remove and set aside.
- Add the chopped onion and minced garlic to the pot and sauté until fragrant.
- Return the lamb to the pot and add the sliced carrots, diced potatoes, red wine, beef or lamb broth, and bay leaves.
- Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 2 hours or until the lamb is tender.
- Adjust the seasoning with salt and pepper if needed.
- Serve the lamb stew hot, garnished with fresh herbs if desired.
