Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 3 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup red wine
  • 4 cups beef or lamb broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the lamb chunks with salt and pepper.
  2. In a large pot, heat the olive oil over medium heat and brown the lamb in batches. Remove and set aside.
  3. Add the chopped onion and minced garlic to the pot and sauté until fragrant.
  4. Return the lamb to the pot and add the sliced carrots, diced potatoes, red wine, beef or lamb broth, and bay leaves.
  5. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 2 hours or until the lamb is tender.
  6. Adjust the seasoning with salt and pepper if needed.
  7. Serve the lamb stew hot, garnished with fresh herbs if desired.
