Ingredients

  • 2 lbs (900g) lamb shoulder, cut into chunks
  • 4 large potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 1 red bell pepper, diced
  • 1 cup (240ml) tomato sauce
  • 1 cup (240ml) beef or vegetable broth
  • 1/2 cup (120ml) dry white wine
  • 2 bay leaves
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the lamb chunks and brown them on all sides, then remove from the pot and set aside.
  3. Lower the heat to medium and add the onions, garlic, and carrots to the pot. Cook until the vegetables are softened.
  4. Stir in the tomato sauce, wine, broth, paprika, cumin, bay leaves, and season with salt and pepper.
  5. Return the browned lamb to the pot and bring the stew to a simmer. Cover and cook for 1 hour, stirring occasionally.
  6. Add the cubed potatoes and diced bell pepper to the stew, and continue to simmer for an additional 45 minutes, or until the lamb is tender and the potatoes are cooked through.
  7. Adjust the seasoning if needed, then remove the bay leaves before serving.
