Ingredients
- 1 kg lamb tripe, cleaned and cut into small pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 1/2 cup red wine
- 4 cups beef broth
- 2 bay leaves
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the lamb tripe to the pot and cook until browned.
- Stir in the carrots, potatoes, tomatoes, and red bell pepper. Cook for a few minutes.
- Pour in the red wine and let it simmer for a couple of minutes.
- Add the beef broth, bay leaves, paprika, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 2 hours, or until the tripe is tender.
- Adjust the seasoning if needed, then remove the bay leaves before serving.
