Lambakarry (faroese Lamb Curry)
Lambakarry, or Faroese Lamb Curry, is a traditional dish from the Faroe Islands that combines tender lamb with aromatic spices and creamy coconut milk. This hearty and flavorful curry is perfect for warming up on a chilly evening.
Ingredients
- 1.5 lbs lamb, cut into chunks
- 2 tbsp curry powder
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 1 cup chicken or vegetable broth
- 2 large potatoes, peeled and diced
- 1 carrot, sliced
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot or Dutch oven, brown the lamb chunks over medium-high heat.
- Add the curry powder, onion, garlic, and ginger to the pot. Cook for a few minutes until the spices are fragrant and the onion is softened.
- Pour in the coconut milk and broth, then add the potatoes and carrot. Season with salt and pepper.
- Bring the curry to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.
- Adjust the seasoning if needed, then serve the lambakarry hot, garnished with chopped cilantro.
