Ingredients

  • 1 1/2 pounds lamb, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks

Instructions

  1. In a bowl, combine the olive oil, red wine vinegar, garlic, oregano, thyme, paprika, salt, and pepper. Add the lamb cubes and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated lamb cubes onto skewers, alternating with the red onion and bell pepper chunks.
  4. Grill the kebabs for 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender and slightly charred.
  5. Remove the kebabs from the grill and let them rest for a few minutes before serving.
