Lambi Fritters (conch Fritters)

Ingredients
- 1 lb conch meat, finely chopped
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 1 tsp thyme, chopped
- 1 tsp hot pepper sauce
- 1/2 cup milk
- 2 eggs, beaten
- Salt and pepper to taste
- Oil for deep-frying
Instructions
- In a large bowl, combine the conch meat, flour, cornmeal, onion, bell pepper, garlic, green onions, thyme, and hot pepper sauce.
- In a separate bowl, whisk together the milk and eggs. Pour the mixture into the conch batter and stir until well combined. Season with salt and pepper.
- Heat the oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per batch.
- Remove the fritters from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
