Ingredients

  • 1 lb conch meat, finely chopped
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 tsp thyme, chopped
  • 1 tsp hot pepper sauce
  • 1/2 cup milk
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Oil for deep-frying

Instructions

  1. In a large bowl, combine the conch meat, flour, cornmeal, onion, bell pepper, garlic, green onions, thyme, and hot pepper sauce.
  2. In a separate bowl, whisk together the milk and eggs. Pour the mixture into the conch batter and stir until well combined. Season with salt and pepper.
  3. Heat the oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  4. Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per batch.
  5. Remove the fritters from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
