Lamington Pancakes
Lamington Pancakes are a delicious twist on the classic Australian lamington dessert. These fluffy pancakes are coated in chocolate and coconut, making them a perfect treat for breakfast or brunch.
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 cup chocolate sauce
- 1 cup shredded coconut
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick pan over medium heat and lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
- Once the pancakes are cooked, dip each one in the chocolate sauce and then coat with shredded coconut.
