Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chocolate sauce
  • 1 cup shredded coconut

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick pan over medium heat and lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface.
  6. Flip the pancakes and cook for another 1-2 minutes until golden brown.
  7. Repeat with the remaining batter.
  8. Once the pancakes are cooked, dip each one in the chocolate sauce and then coat with shredded coconut.
  9. Serve the lamington pancakes warm and enjoy!
