Lampeter Lamb Tagine

Ingredients

  • 2 lbs lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup dried apricots
  • 1/4 cup sliced almonds
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a tagine or large pot, brown the lamb over medium-high heat.
  2. Add the onion and garlic, and cook until softened.
  3. Stir in the ginger, cumin, coriander, cinnamon, and cayenne pepper, and cook for 1 minute.
  4. Pour in the diced tomatoes and chicken broth. Bring to a simmer.
  5. Add the dried apricots, cover, and simmer for 1.5 hours, or until the lamb is tender.
  6. Season with salt and pepper, and stir in the sliced almonds.
  7. Garnish with fresh cilantro before serving.
