Lampeter Lamb Tagine
Lampeter Lamb Tagine is a traditional dish from the Ceredigion region of Wales, known for its rich flavors and aromatic spices.
Ingredients
- 2 lbs lamb, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1/2 cup dried apricots
- 1/4 cup sliced almonds
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a tagine or large pot, brown the lamb over medium-high heat.
- Add the onion and garlic, and cook until softened.
- Stir in the ginger, cumin, coriander, cinnamon, and cayenne pepper, and cook for 1 minute.
- Pour in the diced tomatoes and chicken broth. Bring to a simmer.
- Add the dried apricots, cover, and simmer for 1.5 hours, or until the lamb is tender.
- Season with salt and pepper, and stir in the sliced almonds.
- Garnish with fresh cilantro before serving.
