Ingredients
- 1 cup dried red lentils
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and cook until softened.
- Stir in the curry powder, cumin, turmeric, and cayenne pepper, and cook for 1 minute.
- Add the diced tomatoes with their juices and the coconut milk. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
- Season with salt to taste.
