Ingredients
- 500g lampuki fish fillets
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup green olives, pitted and chopped
- 1/4 cup capers
- 1/4 cup parsley, chopped
- Salt and pepper to taste
- 500g puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix together the chopped onion, diced tomatoes, chopped olives, capers, and parsley. Season with salt and pepper.
- Cut the fish fillets into small pieces and add them to the bowl. Gently mix everything together to combine the ingredients.
- Roll out the puff pastry on a floured surface into a rectangle shape.
- Spoon the fish mixture onto the pastry, leaving a border around the edges.
- Roll up the pastry, enclosing the fish filling, and seal the edges by pressing them together.
- Place the roll on a baking sheet lined with parchment paper, seam side down.
- Brush the top of the roll with the beaten egg to create a golden crust.
- Bake in the preheated oven for 45 minutes or until the pastry is golden and the fish is cooked through.
