Lams Stoofpot (surinamese Lamb Stew)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp cayenne pepper
  • 2 cups beef broth
  • 2 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • Salt and pepper to taste

Instructions

  1. Season the lamb with salt, pepper, cumin, turmeric, coriander, and cayenne pepper.
  2. Heat oil in a large pot and brown the lamb chunks on all sides. Remove from the pot and set aside.
  3. In the same pot, sauté the onions and garlic until softened.
  4. Add the diced tomatoes and cook until they start to break down.
  5. Return the lamb to the pot and pour in the beef broth. Bring to a simmer, then cover and cook for 1 hour.
  6. Add the potatoes, carrots, and bell pepper to the pot. Continue to simmer, covered, for another 45 minutes to 1 hour, or until the lamb is tender and the vegetables are cooked through.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the Lams Stoofpot hot with rice or roti.
