Lams Stoofpot (surinamese Lamb Stew)
Lams Stoofpot is a traditional Surinamese lamb stew that is rich in flavor and perfect for a hearty meal. This dish is a favorite in Surinamese cuisine and is often enjoyed with rice or roti.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp coriander
- 1 tsp cayenne pepper
- 2 cups beef broth
- 2 potatoes, peeled and cubed
- 2 carrots, sliced
- 1 bell pepper, diced
- Salt and pepper to taste
Instructions
- Season the lamb with salt, pepper, cumin, turmeric, coriander, and cayenne pepper.
- Heat oil in a large pot and brown the lamb chunks on all sides. Remove from the pot and set aside.
- In the same pot, sauté the onions and garlic until softened.
- Add the diced tomatoes and cook until they start to break down.
- Return the lamb to the pot and pour in the beef broth. Bring to a simmer, then cover and cook for 1 hour.
- Add the potatoes, carrots, and bell pepper to the pot. Continue to simmer, covered, for another 45 minutes to 1 hour, or until the lamb is tender and the vegetables are cooked through.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Lams Stoofpot hot with rice or roti.
