Ingredients
- 2 lobsters, about 1 1/2 pounds each
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1 onion, finely chopped
- 1 teaspoon sweet paprika
- 1/2 teaspoon hot paprika
- 1 bay leaf
- Salt to taste
- 1/2 cup white wine
- 2 cups fish or seafood broth
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil. Add the lobsters and cook for 8 minutes. Remove from the water and let them cool slightly. Once cooled, remove the meat from the shells and cut into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and onion, and cook until softened.
- Stir in the sweet paprika, hot paprika, bay leaf, and salt. Cook for 1 minute.
- Pour in the white wine and let it reduce by half.
- Add the lobster pieces and fish or seafood broth. Simmer for 10 minutes.
- Sprinkle with chopped parsley before serving.
