Ingredients

  • 1 pound beef brisket, sliced
  • 8 cups beef broth
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2-inch piece of ginger, sliced
  • 2 star anise
  • 2 cinnamon sticks
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • Salt, to taste
  • 12 oz hand-pulled noodles
  • Green onions, chopped, for garnish

Instructions

  1. In a large pot, bring the beef broth to a boil.
  2. Add the beef brisket, onion, garlic, ginger, star anise, cinnamon sticks, soy sauce, dark soy sauce, Shaoxing wine, and sugar to the pot.
  3. Reduce the heat to low and let the soup simmer for 1.5 to 2 hours, or until the beef is tender.
  4. Cook the hand-pulled noodles according to the package instructions.
  5. Divide the cooked noodles into serving bowls and ladle the beef and broth over the noodles.
  6. Garnish with chopped green onions and serve hot.
