Lapland Reindeer Stew

Ingredients

  • 1 kg reindeer meat, cubed
  • 3 large carrots, sliced
  • 2 onions, chopped
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the cubed reindeer meat over medium heat.
  2. Add the onions and carrots, and cook until the onions are translucent.
  3. Pour in the beef broth and red wine, then add the bay leaves and thyme.
  4. Season with salt and pepper, then cover and simmer for 1.5 hours.
  5. Add the diced potatoes and continue to simmer for another 30 minutes, or until the potatoes are tender.
  6. Adjust seasoning if needed, then serve hot.
