Ingredients

  • 2 large taro roots, peeled and sliced
  • 2 sweet potatoes, peeled and sliced
  • 1 cup cassava, peeled and sliced
  • 1 ripe pineapple, peeled and cubed
  • 1 papaya, peeled, seeds removed, and cubed
  • 2 cups coconut milk
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Layer the taro, sweet potatoes, and cassava in a baking dish.
  3. Add the pineapple and papaya on top of the root vegetables.
  4. Pour the coconut milk over the fruits and vegetables.
  5. Sprinkle with salt.
  6. Cover the baking dish with foil and bake for 1 hour, or until the root vegetables are tender.
  7. Serve hot and enjoy!
