Laplap (tropical Fusion)
Laplap is a traditional dish from the Solomon Islands, made with root vegetables and coconut milk. This recipe adds a tropical fusion twist to the classic dish, incorporating fresh fruits and flavors from the region.

Ingredients
- 2 large taro roots, peeled and sliced
- 2 sweet potatoes, peeled and sliced
- 1 cup cassava, peeled and sliced
- 1 ripe pineapple, peeled and cubed
- 1 papaya, peeled, seeds removed, and cubed
- 2 cups coconut milk
- 1 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Layer the taro, sweet potatoes, and cassava in a baking dish.
- Add the pineapple and papaya on top of the root vegetables.
- Pour the coconut milk over the fruits and vegetables.
- Sprinkle with salt.
- Cover the baking dish with foil and bake for 1 hour, or until the root vegetables are tender.
- Serve hot and enjoy!
