Large Pearl Tapioca Pudding

Ingredients
- 1/2 cup large pearl tapioca
- 4 cups milk
- 1/2 cup sugar
- 2 eggs, separated
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, soak the tapioca in 2 cups of milk for 1 hour.
- In a saucepan, combine the remaining 2 cups of milk, sugar, and salt. Bring to a boil over medium heat.
- In a small bowl, beat the egg yolks. Gradually stir in some of the hot milk mixture. Then, pour the egg mixture back into the saucepan with the remaining hot milk.
- Cook and stir over medium heat until the mixture comes to a full boil. Remove from heat and stir in the soaked tapioca.
- In a small bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the hot tapioca mixture.
- Stir in the vanilla extract. Allow the pudding to cool before serving.
