Large Pearl Tapioca Pudding

Ingredients

  • 1/2 cup large pearl tapioca
  • 4 cups milk
  • 1/2 cup sugar
  • 2 eggs, separated
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, soak the tapioca in 2 cups of milk for 1 hour.
  2. In a saucepan, combine the remaining 2 cups of milk, sugar, and salt. Bring to a boil over medium heat.
  3. In a small bowl, beat the egg yolks. Gradually stir in some of the hot milk mixture. Then, pour the egg mixture back into the saucepan with the remaining hot milk.
  4. Cook and stir over medium heat until the mixture comes to a full boil. Remove from heat and stir in the soaked tapioca.
  5. In a small bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the hot tapioca mixture.
  6. Stir in the vanilla extract. Allow the pudding to cool before serving.
