Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 pound mushrooms, sliced
- 10 ounces fresh spinach
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 4 cups creamy white sauce (béchamel)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the mushrooms and cook until they release their liquid and start to brown. Add the spinach and cook until wilted. Season with salt, pepper, oregano, and red pepper flakes.
- In a bowl, mix the ricotta, Parmesan, and half of the mozzarella. Season with salt and pepper.
- Spread a thin layer of white sauce in the bottom of a 9x13 inch baking dish. Arrange 3 lasagna noodles on top. Spread half of the ricotta mixture over the noodles, then half of the mushroom and spinach mixture. Repeat the layers, ending with the remaining white sauce and mozzarella.
- Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Let the lasagna rest for 10 minutes before serving.
