Ingredients

  • 2 large eggplants, thinly sliced lengthwise
  • 1 cup ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the eggplant slices on a baking sheet, brush with olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes until tender.
  3. In a bowl, mix the ricotta cheese, half of the mozzarella, half of the Parmesan, garlic, basil, red pepper flakes, salt, and pepper.
  4. In a baking dish, spread a thin layer of marinara sauce. Arrange a layer of roasted eggplant slices on top.
  5. Spoon half of the cheese mixture over the eggplant and spread it evenly. Repeat the layers of marinara sauce, eggplant, and cheese mixture.
  6. Top with the remaining mozzarella and Parmesan cheese.
  7. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
  8. Let the lasagna rest for 10 minutes before serving. Garnish with fresh basil, if desired.
