Ingredients

  • 400g buckwheat pizzoccheri pasta
  • 2 medium potatoes, peeled and thinly sliced
  • 1/2 small cabbage, shredded
  • 200g Bitto cheese, grated
  • 200g Parmigiano-Reggiano cheese, grated
  • 150g unsalted butter
  • 2 cloves garlic, minced
  • 500ml whole milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cook the pizzoccheri pasta according to the package instructions. Drain and set aside.
  3. In a large pot, boil the potato slices and shredded cabbage for 5 minutes. Drain and set aside.
  4. In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes.
  5. Gradually whisk in the milk and bring to a simmer. Cook for 5 minutes, then remove from heat. Season with salt and pepper.
  6. Layer the ingredients in a baking dish in the following order: a thin layer of the milk sauce, a layer of pizzoccheri pasta, a layer of potatoes and cabbage, a layer of grated Bitto cheese. Repeat the layers, finishing with a generous layer of Parmigiano-Reggiano cheese on top.
  7. Bake in the preheated oven for 30-35 minutes, or until the cheese is golden and bubbly.
  8. Let the lasagna rest for 10 minutes before serving.
