Lasagna di Pizzoccheri Valtellinesi, also known as Valtellina Pizzoccheri Lasagna, is a traditional dish from the Lombardy region of Italy. This hearty and flavorful lasagna features layers of buckwheat pasta, potatoes, cabbage, and cheese, all baked to perfection.
Ingredients
- 400g buckwheat pizzoccheri pasta
- 2 medium potatoes, peeled and thinly sliced
- 1/2 small cabbage, shredded
- 200g Bitto cheese, grated
- 200g Parmigiano-Reggiano cheese, grated
- 150g unsalted butter
- 2 cloves garlic, minced
- 500ml whole milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Cook the pizzoccheri pasta according to the package instructions. Drain and set aside.
- In a large pot, boil the potato slices and shredded cabbage for 5 minutes. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes.
- Gradually whisk in the milk and bring to a simmer. Cook for 5 minutes, then remove from heat. Season with salt and pepper.
- Layer the ingredients in a baking dish in the following order: a thin layer of the milk sauce, a layer of pizzoccheri pasta, a layer of potatoes and cabbage, a layer of grated Bitto cheese. Repeat the layers, finishing with a generous layer of Parmigiano-Reggiano cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the cheese is golden and bubbly.
- Let the lasagna rest for 10 minutes before serving.
