Ingredients

  • 1 pound (450g) lasagna noodles
  • 1 pound (450g) ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 can (28 ounces) crushed tomatoes
  • 1/2 cup (120ml) red wine
  • 2 cups (480ml) whole milk
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (60g) butter
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 cup (100g) grated Parmigiano-Reggiano cheese

Instructions

  1. In a large pot, brown the ground beef over medium heat. Add the onion, garlic, carrot, and celery, and cook until the vegetables are soft.
  2. Pour in the crushed tomatoes and red wine. Season with salt and pepper, and let the sauce simmer for 30 minutes.
  3. Cook the lasagna noodles according to the package instructions, then drain and set aside.
  4. In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux, then gradually whisk in the milk. Cook the béchamel sauce until thickened, then season with nutmeg, salt, and pepper.
  5. Preheat the oven to 375°F (190°C). Spread a layer of Bolognese sauce in the bottom of a baking dish. Arrange a layer of lasagna noodles on top, followed by a layer of béchamel sauce. Repeat the layers, finishing with a generous sprinkle of Parmigiano-Reggiano cheese.
  6. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly.
  7. Let the lasagna rest for 10 minutes before slicing and serving.
