Latvian Carrot Soup (Latviešu burkānu zupa)
Latviešu burkānu zupa, or Latvian Carrot Soup, is a traditional dish from Latvian cuisine that is both hearty and comforting. This simple and delicious soup is perfect for a cozy meal on a chilly day.
Ingredients
- 1 kg carrots, peeled and chopped
- 1 onion, chopped
- 2 potatoes, peeled and diced
- 1 liter vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, sauté the chopped onions until translucent.
- Add the chopped carrots and diced potatoes to the pot and cook for 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.
- Using an immersion blender, purée the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes, then remove from heat.
- Serve the soup hot, garnished with fresh dill.
