Latvian Chicken Liver Pâté (Latviešu vistas aknu pastēte)
Latvian Chicken Liver Pâté, known as Latviešu vistas aknu pastēte, is a traditional Latvian dish that is rich and flavorful. This creamy pâté is perfect for spreading on bread or crackers as an appetizer or snack.
Ingredients
- 500g chicken livers, trimmed
- 1 onion, chopped
- 2 cloves garlic, minced
- 100g butter
- 1/4 cup heavy cream
- 2 tbsp brandy
- Salt and pepper to taste
Instructions
- In a skillet, melt 50g of butter over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Add the chicken livers to the skillet and cook until they are browned on the outside but still pink on the inside.
- Transfer the mixture to a food processor and process until smooth.
- Return the mixture to the skillet, add the remaining butter, heavy cream, and brandy. Cook until the pâté is thickened.
- Season with salt and pepper to taste.
- Transfer the pâté to a serving dish and refrigerate until firm.
