Latvian Chicken Liver Pâté (Latviešu vistas aknu pastēte)

Ingredients

  • 500g chicken livers, trimmed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 100g butter
  • 1/4 cup heavy cream
  • 2 tbsp brandy
  • Salt and pepper to taste

Instructions

  1. In a skillet, melt 50g of butter over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the chicken livers to the skillet and cook until they are browned on the outside but still pink on the inside.
  4. Transfer the mixture to a food processor and process until smooth.
  5. Return the mixture to the skillet, add the remaining butter, heavy cream, and brandy. Cook until the pâté is thickened.
  6. Season with salt and pepper to taste.
  7. Transfer the pâté to a serving dish and refrigerate until firm.
