Latvian Honey Cake (Latviešu medus kūka)

Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup honey
- 1/2 cup butter
- 1 tsp baking soda
- 1 tsp cinnamon
- 3 cups all-purpose flour
- 2 cups heavy cream
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour 9-inch round cake pans.
- In a mixing bowl, beat the eggs and sugar until thick and pale.
- Heat the honey and butter in a saucepan until the butter melts. Stir in the baking soda and cinnamon. Add the honey mixture to the egg mixture and beat well.
- Gradually stir in the flour until a smooth batter forms.
- Pour the batter into the prepared cake pans and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool completely.
- Whip the heavy cream until stiff peaks form, then fold in the sour cream.
- Spread the cream mixture between the cake layers, stacking them on top of each other.
- Refrigerate the cake for at least 4 hours before serving.
