Latvian Meatballs in Mushroom Sauce (Latviešu gaļas klosteri sēņu mērcē)

Ingredients

  • 500g ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 300g mushrooms, sliced
  • 2 cups beef broth
  • 1/2 cup sour cream
  • 2 tbsp all-purpose flour
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, egg, salt, and black pepper. Mix until well combined, then shape the mixture into meatballs.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook until they release their liquid and become golden brown, about 5 minutes.
  4. Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  5. Pour in the beef broth and stir to combine, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
  6. Return the meatballs to the skillet, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through.
  7. Stir in the sour cream and cook for an additional 5 minutes until the sauce thickens slightly.
  8. Remove from heat and garnish with fresh parsley before serving.
