Latvian Mushroom Pie (Latviešu sēņu pīrāgs)

Ingredients

  • 500g fresh mushrooms, sliced
  • 1 onion, finely chopped
  • 2 tbsp butter
  • 1 cup sour cream
  • 2 eggs
  • Salt and pepper to taste
  • 2 sheets of store-bought puff pastry

Instructions

  1. In a pan, sauté the onions in butter until translucent.
  2. Add the sliced mushrooms and cook until they release their moisture and become tender. Season with salt and pepper.
  3. In a bowl, mix the sour cream and eggs until well combined.
  4. Roll out one sheet of puff pastry and place it in a pie dish. Prick the bottom with a fork.
  5. Spread the mushroom mixture over the pastry, then pour the sour cream and egg mixture on top.
  6. Place the second sheet of puff pastry over the filling, sealing the edges with a fork. Cut slits on the top for steam to escape.
  7. Bake in a preheated oven at 200°C (400°F) for 40-45 minutes, or until the pastry is golden brown.
  8. Let the pie cool for a few minutes before slicing and serving.
