Latvian Pork Stew (Latviešu cūkas mērce)
Latviešu cūkas mērce, or Latvian Pork Stew, is a traditional dish from Latvian cuisine that is hearty and flavorful. This stew is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 lbs pork shoulder, cut into cubes
- 3 large onions, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 3 garlic cloves, minced
- 2 bay leaves
- 1 tsp caraway seeds
- 1 tsp paprika
- 4 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the pork cubes and brown them on all sides. Remove the pork from the pot and set aside.
- In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the minced garlic, caraway seeds, and paprika. Cook for another 2 minutes.
- Return the browned pork to the pot. Add the bay leaves and pour in the broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the pork is tender.
- Remove the bay leaves and adjust the seasoning if needed before serving.
