Latvian Pork Stew (Latviešu cūkas mērce)

Ingredients

  • 2 lbs pork shoulder, cut into cubes
  • 3 large onions, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp caraway seeds
  • 1 tsp paprika
  • 4 cups beef or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the pork cubes and brown them on all sides. Remove the pork from the pot and set aside.
  2. In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic, caraway seeds, and paprika. Cook for another 2 minutes.
  4. Return the browned pork to the pot. Add the bay leaves and pour in the broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the pork is tender.
  6. Remove the bay leaves and adjust the seasoning if needed before serving.
