Instructions

- Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curds and whey into the colander, allowing the whey to drain away.
- Gather the corners of the cheesecloth and tie them together to form a bundle. Hang the bundle over the bowl and let it drain for 1 hour.
- After the cheese has drained, transfer it to a mixing bowl and stir in the caraway seeds and salt until well combined.
- Shape the cheese into a round disk and refrigerate for at least 2 hours before serving.
