Latvijas Kmynu Sieris (latvian Caraway Cheese)

Ingredients

  • 1 gallon whole milk
  • 1/4 cup white vinegar
  • 2 teaspoons caraway seeds
  • 1 teaspoon salt

Instructions

  1. In a large pot, heat the milk over medium heat until it reaches 180°F, stirring occasionally to prevent scorching.
  2. Remove the pot from the heat and stir in the white vinegar. Let the mixture sit for 10 minutes to allow the curds to form.
  3. Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curds and whey into the colander, allowing the whey to drain away.
  4. Gather the corners of the cheesecloth and tie them together to form a bundle. Hang the bundle over the bowl and let it drain for 1 hour.
  5. After the cheese has drained, transfer it to a mixing bowl and stir in the caraway seeds and salt until well combined.
  6. Shape the cheese into a round disk and refrigerate for at least 2 hours before serving.
