Laugharne Lobster Bisque

Ingredients
- 2 live lobsters
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1/4 cup tomato paste
- 1/2 cup brandy
- 4 cups fish stock
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the live lobsters and cook for 8-10 minutes. Remove the lobsters and let them cool.
- Once cooled, remove the lobster meat from the shells and set aside. Reserve the shells.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft.
- Add the tomato paste and cook for 2 minutes. Pour in the brandy and let it simmer until reduced by half.
- Add the fish stock and the reserved lobster shells. Simmer for 30 minutes.
- Strain the soup, discarding the solids. Return the soup to the pot and add the lobster meat and heavy cream. Simmer for 10 minutes.
- Season with salt and pepper. Serve hot, garnished with fresh parsley.
