Laugharne Lobster Bisque

Ingredients

  • 2 live lobsters
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/2 cup brandy
  • 4 cups fish stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the live lobsters and cook for 8-10 minutes. Remove the lobsters and let them cool.
  2. Once cooled, remove the lobster meat from the shells and set aside. Reserve the shells.
  3. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft.
  4. Add the tomato paste and cook for 2 minutes. Pour in the brandy and let it simmer until reduced by half.
  5. Add the fish stock and the reserved lobster shells. Simmer for 30 minutes.
  6. Strain the soup, discarding the solids. Return the soup to the pot and add the lobster meat and heavy cream. Simmer for 10 minutes.
  7. Season with salt and pepper. Serve hot, garnished with fresh parsley.
