Lava Grilled Pineapple Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 fresh pineapple, peeled and cored
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the pineapple into rings and set aside.
  3. In a small bowl, whisk together the soy sauce, honey, garlic, ginger, and black pepper to make the marinade.
  4. Place the chicken breasts in a resealable plastic bag and pour in half of the marinade. Seal the bag and massage the marinade into the chicken. Let it marinate for 10 minutes.
  5. Grill the chicken for 6-7 minutes on each side, or until fully cooked, basting with the remaining marinade during grilling.
  6. During the last few minutes of grilling, place the pineapple rings on the grill and cook for 2-3 minutes on each side until lightly charred.
  7. Serve the grilled chicken with the caramelized pineapple rings on top.
