Ingredients
- 4 boneless, skinless chicken breasts
- 1 fresh pineapple, peeled and cored
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon black pepper
Instructions
- Preheat the grill to medium-high heat.
- Cut the pineapple into rings and set aside.
- In a small bowl, whisk together the soy sauce, honey, garlic, ginger, and black pepper to make the marinade.
- Place the chicken breasts in a resealable plastic bag and pour in half of the marinade. Seal the bag and massage the marinade into the chicken. Let it marinate for 10 minutes.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked, basting with the remaining marinade during grilling.
- During the last few minutes of grilling, place the pineapple rings on the grill and cook for 2-3 minutes on each side until lightly charred.
- Serve the grilled chicken with the caramelized pineapple rings on top.
