Layered Pancake (flavorful Flija)
Layered Pancake, also known as Flija, is a traditional Albanian dish that is both delicious and visually stunning. This flavorful dish is made by layering thin pancakes with a savory filling and baking them to perfection.
Ingredients
- 6 cups all-purpose flour
- 8 cups water
- 1 cup yogurt
- 1 cup feta cheese, crumbled
- 1 cup butter, melted
- Salt to taste
Instructions
- In a large bowl, mix the flour and water to make a thin pancake batter.
- Heat a non-stick pan over medium heat and pour a ladleful of batter to make a thin pancake. Cook for 1-2 minutes on each side. Repeat until all the batter is used.
- In a separate bowl, mix the yogurt, feta cheese, and a pinch of salt to make the filling.
- Preheat the oven to 350°F (175°C).
- Grease a baking dish with melted butter.
- Place a pancake in the baking dish and spread a thin layer of the filling on top. Repeat with the remaining pancakes and filling, stacking them up to create layers.
- Brush the top layer with melted butter.
- Bake in the preheated oven for 30-40 minutes, or until the top is golden brown.
- Serve hot and enjoy!
