Ingredients

  • 1 cup rice flour
  • 1/2 cup tapioca flour
  • 1 1/2 cups coconut milk
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 pandan leaf, knotted
  • Red food coloring
  • Green food coloring
  • Yellow food coloring

Instructions

  1. In a bowl, mix the rice flour and tapioca flour.
  2. In a saucepan, heat the coconut milk, sugar, salt, and pandan leaf until the sugar is dissolved.
  3. Pour 1 cup of the coconut milk mixture into the flour mixture and stir until smooth.
  4. Divide the batter into 3 equal portions. Add red food coloring to one portion, green to another, and yellow to the third portion.
  5. Grease a square pan and steam the first layer of batter for 5 minutes or until set.
  6. Repeat with the remaining batter, layering the colors on top of each other.
  7. Once all the layers are steamed, steam the entire cake for an additional 15 minutes.
  8. Let the cake cool before slicing and serving.
