Layered Steamed Cake (kuih Lapis)
Layered Steamed Cake, also known as Kuih Lapis, is a popular Malaysian sweet treat that is enjoyed during festive occasions and as a snack. This colorful and aromatic cake is made by steaming layers of different flavored batter to create a beautiful and delicious dessert.
Ingredients
- 1 cup rice flour
- 1/2 cup tapioca flour
- 1 1/2 cups coconut milk
- 1 cup sugar
- 1/2 teaspoon salt
- 1 pandan leaf, knotted
- Red food coloring
- Green food coloring
- Yellow food coloring
Instructions
- In a bowl, mix the rice flour and tapioca flour.
- In a saucepan, heat the coconut milk, sugar, salt, and pandan leaf until the sugar is dissolved.
- Pour 1 cup of the coconut milk mixture into the flour mixture and stir until smooth.
- Divide the batter into 3 equal portions. Add red food coloring to one portion, green to another, and yellow to the third portion.
- Grease a square pan and steam the first layer of batter for 5 minutes or until set.
- Repeat with the remaining batter, layering the colors on top of each other.
- Once all the layers are steamed, steam the entire cake for an additional 15 minutes.
- Let the cake cool before slicing and serving.
