Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup tomato paste
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups vegetable broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Drain the soaked beans and place them in a large baking dish.
  3. Add the chopped onion, minced garlic, olive oil, tomato paste, honey, oregano, paprika, salt, and pepper to the baking dish with the beans.
  4. Pour the vegetable broth over the bean mixture and stir to combine.
  5. Cover the baking dish with foil and bake in the preheated oven for 1.5 hours.
  6. Remove the foil and continue baking for an additional 30 minutes, or until the beans are tender and the liquid has thickened.
  7. Let the baked beans cool for a few minutes before serving.
