Laz Pilaf with Chicken (Λαζ Πιλάφι με Κοτόπουλο)

Ingredients

  • 2 cups long-grain rice
  • 1 lb chicken, cut into pieces
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the rice, cumin, paprika, cinnamon, salt, and pepper. Cook for 2-3 minutes to toast the rice and spices.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff the pilaf with a fork and let it sit for a few minutes before serving.
