Λαζ Πιλάφι με Κοτόπουλο (Laz Pilaf with Chicken) is a traditional dish from Pontic Greek cuisine, known for its flavorful combination of rice, chicken, and aromatic spices.
Ingredients
- 2 cups long-grain rice
- 1 lb chicken, cut into pieces
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the rice, cumin, paprika, cinnamon, salt, and pepper. Cook for 2-3 minutes to toast the rice and spices.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork and let it sit for a few minutes before serving.
