Ingredients
- 4 large bell peppers
- 1 cup rice
- 250g ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 tomatoes, grated
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, ground meat, onion, tomatoes, parsley, mint, olive oil, salt, and pepper. Mix well.
- Stuff the bell peppers with the rice and meat mixture, and place them in a deep pot.
- Add water to the pot until the peppers are halfway submerged.
- Cover the pot and simmer over low heat for 1 hour, or until the peppers are tender and the filling is cooked through.
- Serve the stuffed peppers hot, with a dollop of yogurt on the side if desired.
