Laz Stuffed Bell Peppers (Λαζ Γεμιστές Καλαμποκοπιπεριές)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 250g ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground meat, onion, tomatoes, parsley, mint, olive oil, salt, and pepper. Mix well.
  4. Stuff the bell peppers with the rice and meat mixture, and place them in a deep pot.
  5. Add water to the pot until the peppers are halfway submerged.
  6. Cover the pot and simmer over low heat for 1 hour, or until the peppers are tender and the filling is cooked through.
  7. Serve the stuffed peppers hot, with a dollop of yogurt on the side if desired.
