Laz Stuffed Cabbage Leaves (Λαζ Γεμιστές Λαχανοφύλλα)

Ingredients

  • 1 large head of cabbage
  • 1 cup of rice
  • 500g ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons tomato paste
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the cabbage leaves, one by one, and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a large bowl, mix together the rice, ground meat, onion, herbs, olive oil, tomato paste, lemon juice, salt, and pepper.
  3. Place a spoonful of the filling onto each cabbage leaf and roll them up, tucking in the sides as you go.
  4. Arrange the stuffed cabbage leaves in a large pot, seam side down, and add enough water to cover them. Place a plate on top to keep them from unraveling.
  5. Cover and simmer over low heat for 1 hour, or until the rice is fully cooked and the cabbage leaves are tender.
  6. Serve the Λαζ Γεμιστές Λαχανοφύλλα hot, garnished with a dollop of Greek yogurt and a sprinkle of fresh herbs.
