Λαζ Γεμιστές Λαχανοφύλλα (Laz Stuffed Cabbage Leaves) is a traditional dish from Pontic Greek cuisine, featuring tender cabbage leaves filled with a flavorful mixture of rice, ground meat, and aromatic herbs.
Ingredients
- 1 large head of cabbage
- 1 cup of rice
- 500g ground meat (beef or lamb)
- 1 onion, finely chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons tomato paste
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Carefully remove the cabbage leaves, one by one, and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a large bowl, mix together the rice, ground meat, onion, herbs, olive oil, tomato paste, lemon juice, salt, and pepper.
- Place a spoonful of the filling onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Arrange the stuffed cabbage leaves in a large pot, seam side down, and add enough water to cover them. Place a plate on top to keep them from unraveling.
- Cover and simmer over low heat for 1 hour, or until the rice is fully cooked and the cabbage leaves are tender.
- Serve the Λαζ Γεμιστές Λαχανοφύλλα hot, garnished with a dollop of Greek yogurt and a sprinkle of fresh herbs.
