Λαζ Ρολάκια Μελιτζάνας (Laz Stuffed Eggplant Rolls) is a traditional dish from Pontic Greek cuisine, featuring tender eggplant rolls filled with a flavorful mixture of herbs, rice, and ground meat.
Ingredients
- 2 large eggplants
- 1 cup cooked rice
- 1/2 lb ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants lengthwise into thin strips, about 1/4 inch thick.
- Sprinkle the eggplant slices with salt and let them sit for 15 minutes to draw out the bitterness. Rinse and pat dry.
- In a bowl, combine the cooked rice, ground meat, onion, tomatoes, garlic, parsley, mint, cinnamon, salt, and pepper.
- Place a spoonful of the filling at one end of each eggplant slice and roll it up.
- Place the eggplant rolls in a greased baking dish, drizzle with olive oil, and bake for 30-35 minutes until the eggplant is tender and the filling is cooked through.
- Serve the Λαζ Ρολάκια Μελιτζάνας hot, garnished with additional chopped herbs if desired.
