Ingredients

  • 2 large eggplants
  • 1 cup cooked rice
  • 1/2 lb ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants lengthwise into thin strips, about 1/4 inch thick.
  3. Sprinkle the eggplant slices with salt and let them sit for 15 minutes to draw out the bitterness. Rinse and pat dry.
  4. In a bowl, combine the cooked rice, ground meat, onion, tomatoes, garlic, parsley, mint, cinnamon, salt, and pepper.
  5. Place a spoonful of the filling at one end of each eggplant slice and roll it up.
  6. Place the eggplant rolls in a greased baking dish, drizzle with olive oil, and bake for 30-35 minutes until the eggplant is tender and the filling is cooked through.
  7. Serve the Λαζ Ρολάκια Μελιτζάνας hot, garnished with additional chopped herbs if desired.
