Laz Stuffed Grape Leaves (Λαζ Γεμιστά Αμπελόφυλλα)

Ingredients

  • 1 jar of grape leaves, drained and rinsed
  • 1 cup of short-grain rice
  • 1 onion, finely chopped
  • 1/4 cup of fresh dill, chopped
  • 1/4 cup of fresh mint, chopped
  • 1/4 cup of pine nuts
  • 1/4 cup of currants
  • 1/4 cup of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 lemon, sliced

Instructions

  1. In a large bowl, combine the rice, onion, dill, mint, pine nuts, currants, olive oil, salt, and pepper.
  2. Place a grape leaf on a flat surface, shiny side down. Place a small spoonful of the rice mixture in the center of the leaf.
  3. Fold the bottom of the leaf over the filling, then fold in the sides, and roll it up tightly into a small cylinder.
  4. Repeat with the remaining grape leaves and filling.
  5. Place the stuffed grape leaves in a large pot, seam side down, in a single layer.
  6. Place the lemon slices on top of the grape leaves.
  7. Add enough water to cover the grape leaves, then place a plate on top to keep them submerged.
  8. Cover the pot and simmer over low heat for 45 minutes, or until the rice is tender and the grape leaves are cooked.
  9. Remove from heat and let the stuffed grape leaves cool before serving.
