Ingredients

  • 12 zucchini blossoms
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup rice, uncooked
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • Salt and pepper to taste

Instructions

  1. Gently rinse the zucchini blossoms and remove the pistil from inside each blossom.
  2. In a bowl, mix the crumbled feta, chopped mint, dill, rice, olive oil, onion, tomato, salt, and pepper.
  3. Carefully stuff each zucchini blossom with the filling mixture and twist the petals to enclose the filling.
  4. Place the stuffed zucchini blossoms in a pot and add enough water to cover them.
  5. Cover the pot and cook over medium heat for 15 minutes, or until the rice is fully cooked.
