Ingredients
- 12 zucchini blossoms
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup rice, uncooked
- 1/4 cup olive oil
- 1 onion, finely chopped
- 1 tomato, finely chopped
- Salt and pepper to taste
Instructions
- Gently rinse the zucchini blossoms and remove the pistil from inside each blossom.
- In a bowl, mix the crumbled feta, chopped mint, dill, rice, olive oil, onion, tomato, salt, and pepper.
- Carefully stuff each zucchini blossom with the filling mixture and twist the petals to enclose the filling.
- Place the stuffed zucchini blossoms in a pot and add enough water to cover them.
- Cover the pot and cook over medium heat for 15 minutes, or until the rice is fully cooked.
