Lazian Roast Lamb (abbacchio Al Forno)

Ingredients

  • 1 leg of lamb, bone-in (about 5-6 lbs)
  • 4 cloves garlic, thinly sliced
  • 2 sprigs of fresh rosemary
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. Make small incisions all over the lamb and insert the garlic slices and rosemary sprigs into the incisions.
  3. Drizzle the lamb with olive oil and season generously with salt and pepper.

  5. Let the lamb rest for 15 minutes before carving and serving.
