Ingredients
- 1 leg of lamb, bone-in (about 5-6 lbs)
- 4 cloves garlic, thinly sliced
- 2 sprigs of fresh rosemary
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- Make small incisions all over the lamb and insert the garlic slices and rosemary sprigs into the incisions.
- Drizzle the lamb with olive oil and season generously with salt and pepper.
- Place the lamb on a roasting pan and roast in the preheated oven for 2 hours, or until the internal temperature reaches 145°F for medium-rare or 160°F for medium.
