Ingredients
- 8 oz (225g) spaghetti
- 4 large eggs
- 1 cup (100g) grated Pecorino Romano cheese
- 4 oz (115g) pancetta, diced
- 2 cloves garlic, minced
- 1/2 tsp freshly ground black pepper
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
- In a bowl, whisk together the eggs, Pecorino Romano cheese, and black pepper. Set aside.
- In a large skillet, cook the pancetta over medium heat until crispy. Add the minced garlic and cook for 1-2 minutes.
- Remove the skillet from the heat and add the cooked spaghetti to the pancetta and garlic. Toss to combine.
- Quickly pour the egg and cheese mixture over the hot pasta, tossing quickly to coat the strands well. If the sauce seems too thick, add a little of the reserved pasta water to thin it out.
- Serve immediately, garnished with additional Pecorino Romano cheese and black pepper if desired.
