Lazian Style (spaghetti Carbonara)

Ingredients

  • 8 oz (225g) spaghetti
  • 4 large eggs
  • 1 cup (100g) grated Pecorino Romano cheese
  • 4 oz (115g) pancetta, diced
  • 2 cloves garlic, minced
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. In a bowl, whisk together the eggs, Pecorino Romano cheese, and black pepper. Set aside.
  3. In a large skillet, cook the pancetta over medium heat until crispy. Add the minced garlic and cook for 1-2 minutes.
  4. Remove the skillet from the heat and add the cooked spaghetti to the pancetta and garlic. Toss to combine.
  5. Quickly pour the egg and cheese mixture over the hot pasta, tossing quickly to coat the strands well. If the sauce seems too thick, add a little of the reserved pasta water to thin it out.
  6. Serve immediately, garnished with additional Pecorino Romano cheese and black pepper if desired.
