Ingredients
- 1 pound bucatini pasta
- 1/4 pound pancetta or bacon, diced

- Salt and black pepper to taste
- 1/2 cup grated Pecorino Romano cheese
Instructions
- In a large pot of boiling salted water, cook the bucatini pasta according to the package instructions. Drain and set aside.
- In a large skillet, cook the diced pancetta or bacon over medium heat until crispy. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the skillet.
- Add the chopped onion to the skillet and cook until softened. Add the minced garlic and red pepper flakes, and cook for another minute.
