Lazian Tomato And Bacon Pasta (bucatini All'amatriciana)

Ingredients

  • 1 pound bucatini pasta
  • 1/4 pound pancetta or bacon, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 can (28 ounces) whole peeled tomatoes
  • Salt and black pepper to taste
  • 1/2 cup grated Pecorino Romano cheese

Instructions

  1. In a large pot of boiling salted water, cook the bucatini pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, cook the diced pancetta or bacon over medium heat until crispy. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the skillet.
  3. Add the chopped onion to the skillet and cook until softened. Add the minced garlic and red pepper flakes, and cook for another minute.
  4. Add the canned tomatoes to the skillet, breaking them up with a spoon. Simmer the sauce for about 15 minutes, or until it thickens slightly. Season with salt and black pepper to taste.
  5. Add the cooked bucatini to the skillet with the tomato sauce and toss to coat the pasta evenly.
  6. Serve the pasta in individual bowls, topped with the crispy pancetta or bacon and a generous sprinkle of grated Pecorino Romano cheese.
