Leafy Greens (pahari Saag)

Ingredients

  • 1 bunch of spinach
  • 1 bunch of mustard greens
  • 1 bunch of fenugreek leaves
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil
  • Water

Instructions

  1. Wash the leafy greens thoroughly and chop them.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
  3. Add chopped tomatoes, green chilies, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
  4. Add the chopped leafy greens and a little water. Cover and cook until the greens are tender.
  5. Once the greens are cooked, remove from heat and serve hot.
