Ingredients

  • 1 bunch of leafy greens (spinach, kale, or Swiss chard)
  • 1/2 cup smooth peanut butter
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash the leafy greens thoroughly and chop them into small pieces.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the chopped tomatoes to the pot and cook for 3-4 minutes until they start to soften.
  4. Stir in the peanut butter, salt, and black pepper until well combined.
  5. Add the chopped leafy greens to the pot and stir to coat them with the peanut butter mixture.
  6. Cover the pot and let the greens cook for 10-15 minutes, stirring occasionally, until they are tender.
  7. Once the greens are cooked, remove the pot from the heat and serve the Imifino hot as a side dish.
