Leafy Greens With Peanut Butter (imifino)
This traditional Eswatini dish, known as Imifino, combines leafy greens with creamy peanut butter for a flavorful and nutritious side dish.
Ingredients
- 1 bunch of leafy greens (spinach, kale, or Swiss chard)
- 1/2 cup smooth peanut butter
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Wash the leafy greens thoroughly and chop them into small pieces.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the chopped tomatoes to the pot and cook for 3-4 minutes until they start to soften.
- Stir in the peanut butter, salt, and black pepper until well combined.
- Add the chopped leafy greens to the pot and stir to coat them with the peanut butter mixture.
- Cover the pot and let the greens cook for 10-15 minutes, stirring occasionally, until they are tender.
- Once the greens are cooked, remove the pot from the heat and serve the Imifino hot as a side dish.
