Leberknödel Love

Ingredients

  • 1 lb beef liver, finely chopped
  • 1 onion, finely chopped
  • 2 slices of bread, crust removed and soaked in milk
  • 2 eggs
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • 6 cups beef or vegetable broth

Instructions

  1. In a large bowl, mix together the chopped liver, onion, soaked bread, eggs, parsley, breadcrumbs, salt, and pepper until well combined.
  2. Form the mixture into small dumplings, about the size of a golf ball.
  3. In a large pot, bring the broth to a simmer over medium heat.
  4. Gently drop the liver dumplings into the simmering broth and cook for 15-20 minutes, or until the dumplings are cooked through.
  5. Serve the Leberknödel hot in bowls with a ladle of the flavorful broth.
