Lechón Asado Fiesta (Fiesta de Lechón Asado)

Ingredients

  • 1 whole pork shoulder, about 8-10 pounds
  • 10 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup bitter orange juice (or 1/2 cup orange juice + 1/2 cup lime juice)
  • 2 tablespoons olive oil

Instructions

  1. In a small bowl, mix the minced garlic, oregano, cumin, salt, pepper, bitter orange juice, and olive oil to create the marinade.
  2. Using a sharp knife, score the pork shoulder with a diamond pattern. This will help the marinade penetrate the meat.
  3. Place the pork shoulder in a large resealable plastic bag and pour the marinade over it. Seal the bag and massage the marinade into the meat. Refrigerate for at least 4 hours, or preferably overnight.
  4. Preheat the oven to 300°F (150°C).
  5. Remove the pork shoulder from the marinade and place it in a roasting pan. Discard the remaining marinade.
  6. Roast the pork in the preheated oven for 4 hours, or until the internal temperature reaches 180°F (82°C) and the meat is tender.
  7. Let the pork rest for 15 minutes before carving and serving.
