Lechon Fiesta

Ingredients
- 1 whole pork belly, about 5-6 lbs
- 6 cloves garlic, minced
- 1 onion, finely chopped
- 3 stalks lemongrass, pounded and chopped
- 5 pieces bay leaves
- 1 tablespoon salt
- 1 tablespoon pepper
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/2 cup lemon soda (e.g., Sprite or 7-Up)
Instructions
- Score the pork belly skin with a sharp knife.
- In a bowl, mix together garlic, onion, lemongrass, bay leaves, salt, pepper, soy sauce, and vinegar.
- Rub the mixture all over the pork belly, including the skin and inside the scored parts.
- Marinate the pork belly in the refrigerator for at least 4 hours or overnight.
- Preheat the oven to 350°F (175°C).
- Place the marinated pork belly on a roasting rack and pour the lemon soda into the bottom of the roasting pan.
- Roast the pork belly for 3-4 hours, basting the skin with the pan juices every 30 minutes.
- Once the skin is crispy and the meat is tender, remove the lechon from the oven and let it rest for 15 minutes before slicing and serving.
