Ingredients

  • 2 lbs pork belly
  • 1 onion, finely chopped

  • 4 cups water
  • 1 cup cooking oil

Instructions

  1. In a pot, combine pork belly, onion, garlic, salt, black pepper, bay leaves, and water. Bring to a boil then simmer for 45 minutes or until pork is tender.
  2. Remove the pork belly from the pot and let it cool. Once cooled, make a deep slit in the middle to create a pocket for the stuffing.
  3. Stuff the pork belly with your choice of fillings such as lemongrass, onions, and tomatoes.
  4. Heat the cooking oil in a pan. Carefully place the stuffed pork belly and deep-fry until golden brown and crispy.
  5. Once crispy, remove from the pan and let it rest on a wire rack to drain excess oil.
  6. Slice and serve hot with your favorite dipping sauce.
