Ingredients

  • 1 whole chicken, about 3-4 lbs
  • 6 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 lemon, juiced

Instructions

  1. Combine garlic, soy sauce, fish sauce, brown sugar, black pepper, paprika, oregano, thyme, salt, and lemon juice in a bowl to make the marinade.
  2. Pat the chicken dry with paper towels and rub the marinade all over the chicken, including under the skin and inside the cavity. Marinate for at least 2 hours or overnight in the refrigerator.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated chicken on a roasting pan and roast in the preheated oven for 1 hour or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 10 minutes before carving. Serve and enjoy!
